珍珠米版之糯米鸡 Cheated version of Lor Mai Gai



份量 :4 人份

材料 :
1.5杯 珍珠米
2粒 熟蛋 (切半)
2只 鸡腿 (去皮,起骨)
2朵 香菇 (浸透, 切半)
1条 腊肠 (去衣,切片)

腌鸡材料 :
1tbsp 蚝油
1tbsp 生抽
1tbsp 糖

米的调味料 :
1tbsp 蚝油
1tbsp 糖
2tbsp 生抽
适量 黑酱油

适量 水


做法 :
1。将鸡肉分成 4 份,加入腌料,腌渍2小时。
2。将浸透的香菇去蒂,切半,拌入少许糖调味,备用。
3。将米洗净,沥干,备用。
4。锅里烧热少许油,放入米和调味料 (除了水),翻炒至水分收干。
5。将米倒入电饭锅里,加入适量的水(如平时煮饭的水量),按键煮饭。
6。待饭煮好后,多焖5分钟。
7。深碗里抹上一层薄薄的油,放入一块鸡肉,半朵香菇,半粒熟蛋和适量的腊肠片,再加入熟饭,并压紧。
8。放入预热蒸锅里,大火蒸 20 分钟,取出。
9。倒扣在碟子上,即可。




Makes 4 bowls

Ingredients :
1.5cups Calrose Rice
4 Hard Boiled Eggs (cut into half)
2pcs Chicken Legs (skinned & de-boned)
2pcs Dried Mushrooms (soaked)
1pc Chinese Sausage (remove casing and slice)

Seasoning for Chicken :
1tbsp Oyster Sauce
1tbsp Soy Sauce
1tbsp Sugar

Seasoning for Rice :
1tbsp Oyster Sauce
1tbsp Sugar
2tbsp Soy Sauce
Some Dark Soy Sauce

Water


Method :
1. Cut each Chicken Legs into half. Marinate it with the seasoning for 2 hours.
2. cut the soaked mushroom into half. Add in some sugar.
3. Wash the rice. Drain.
4. Heat up oil in wok. Add in rice and seasoning (except water). Stir until the seasoning dries up.
5. Pour the rice into rice cooker. Add in sufficient water and cook as usual.
6. Leave it into rice cooker for another 5 min when done.
7. Oil the bowls. Place in chicken, mushroom, egg and Chinese sausage, Top up with cooked rice. Press it tightly using a spoon.
8. Steam it in a preheated steamer for 30 min.
9. Overturn it on a plate and serve,
