QQ 番薯年糕 Pan Fried Nian Gao & Sweet Potato




材料 :
年糕
400g 橙心番薯
200g 糯米粉
少许 黑芝麻(装饰)

做法 :
1。番薯蒸熟,倒出多余的水分,再趁热压成泥。
2。加入糯米粉,搓成粉团 (如果太干可加入少许热水)。
3。年糕切成方形状,备用。
4。把粉团平均分成24 份,搓圆再用掌心压扁,中间放入一片年糕,然后再盖上另一片压扁的粉团。
5。最后将外围的粉团压密封口。
6。手指沾上少许水,再沾上芝麻,放在番薯年糕上。
7。锅内烧热少许油,把番薯饼的两面煎成金黄色即可。

迷你咖啡戚风蛋糕 MIni Coffee Chiffon Cake

Specially for the coffee lovers...




Ingredients (A) :
1tbsp 3in1coffee mix
20ml milk
2 egg yolks
20g castor sugar
20ml cooking oil
40g self raising flour

Ingredients B :
2 egg whites
1/4 cream of tartar
50g castor sugar

Method :
1. Dissolve coffee powder with milk.
2. Combine egg yolks, sugar, oil and coffee. Fold in flour and mix well using a hand mixer.
3. Beat egg whites and cream of tartar until soft peaks form.
4. Add in sugar and beat till stiff peaks form.
5. Gently fold in 1/3 of the egg white foam into egg yolk batter.
6. Repeat step 5 for the rest of the egg white foam.
7. Pour batter into a 16cm chiffon cake mould and bake in a pre-heated oven at 170  ̊C for 30 min or till cook.
8. Remove form oven, invert cake until completely cooled.

简单猪脚醋 Pork Knuckle in Black Vinegar



材料 :
姜 (削皮,洗净)
猪脚
熟鸡蛋 (剥壳)

做法 :
1。将1/3 瓶醋和姜放入不锈钢锅内以小火煮滚,息火,隔夜。
2。猪脚切块,洗干净,再飞水。
3。将猪脚放入 (1) 中, 把剩余的醋和半瓶水(以醋瓶子量)和熟鸡蛋加入,小火煮1/2小时,息火。


温馨小贴示 : 隔夜的猪脚醋会更入味。




咸香鱼鳔 Stir Fried Fish Maw



材料 :
2大匙 油
1大匙 蒜茸
1粒      洋葱 (切碎)
2条      红辣椒 (去籽,切粒)
2大匙 虾米 (稍微剁碎)
10g      肉碎
50g      鱼鳔 (浸软,切条)

调味料 :
1/2 大匙 蚝油
1大匙      生抽
1/4 小匙 胡椒粉
1/4小匙 麻油
100ml     水

做法 :
1。烧热油,爆香蒜茸和洋葱,加入辣椒和虾米炒香。
2。加入肉碎和调味料抄匀。
3。最后加入鱼鳔炒匀即可。

咸香芝士松饼 Cheddar Cheese Muffin





Ingredients A :
250g plain flour
1 tbsp baking powder
1/2 tsp salt

Ingredients B :
60g castor sugar
90g cheddar cheese, grated

Ingredients C :
1 egg, lightly beaten
250ml milk
60ml corn oil

Decoration :
50g cheddar cheese, grated

Method :
1. Sift A and stir in B.
2. Beat C until well-mixed. Pour into the flour mixture and mix till just combined. (DO NOT over mix, it should remain lumpy)
3. Spoon batter into paper cup and sprinkle some grated cheddar cheese on top.
4. Bake in a pre-heated oven at 200  ̊C for 30 min.


Note : Make 16 pcs muffins.

Chocolate Chips Cheese Cupcakes



Ingredients A:
2 eggs
80g castor sugar

Ingredients B (Sifted together):
175g plain flour
1 tsp baking powder
1/4 salt

Ingredients C:
60g fresh milk
65g melted butter

Filling (Mixed):
50g softened cream cheese
3/4 tbsp castor sugar

Decoration :
Chocolate chips

Method:
1. Beat ingredients A until light and fluffy.
2.Add in B slowly and mix well.
3. Pour in milk and mix well.
4. Stir in butter.
5. Spoon batter into paper cup until 1/2 full. Add in cheese filling and cover with some batter again.
6. Sprinkle some chocolate chips on top.
7. Bake at 180  ̊C for 25 min.


Note : Make 6 cupcakes.

Poppy Seed Cheese Cupcakes



Ingredients :
125g softened butter
1/8 tsp salt
120g caster sugar
2 eggs
1 egg yolk
10g fresh milk
1 tsp vanilla essence
125g flour

Fillings (Mix well) :
60g softened cream cheese
10g icing sugar

Decoration :
1/2 tsp poppy seeds

Method :
1. Beat butter, salt & sugar until fluffy and light.
2. Add in eggs and mix well.
3. Mix in vanilla & milk.
4. Add in flour and mix well.
5. Spoon batter into paper cup until 3/4 full and fill in 1/2 tbsp filling.
6. Sprinkle some poppy seeds on top of the cupcake.
7. Bake at 170  ̊C for 25 min.


Note : Make 12 pcs cupcakes.
