蒸羊角豆 Steamed Lady Fingers


材料 :
羊角豆
适量 虾米(剁碎)
适量 蒜茸

调味 :
适量 酱油
少许 胡椒粉

做法 :
1。水煮开,放入洋角豆蒸3分钟(视自己喜欢的口感而定)。
2。取出,去蒂再切开。
3。爆香蒜茸和虾米,倒在洋角豆上。
4。加入适量的酱油和少许胡椒粉即可。

香橙戚风蛋糕 Orange Chiffon Cake

Specially for you, aunty. Hope u like this!





Ingredients (A):
75g Self raising Flour (sifted)
4 Egg Yolks
30g Castor Sugar
1/2 tbsp Orange Peel
40ml orange juice
3tbsp Corn Oil

Ingredients (B):
4 Egg Whites
50g Castor Sugar
1/4 tsp Cream of Tartar

Method :
1. Mix all ingredients A evenly using a hand mixer.
2. Beat all ingredients B until frothy and stiff peaks form.
3. Fold ingredients B into A and pour the batter into a 9" tube pan.
4. Bake in a preheated oven at 160  ̊C until light yellow (about 20min) and increase to 170  ̊C until cooked (about another 20min).
5. Remove from oven, invert cake onto table until completely cooled.

香茅日式炸丸 Lemongrass Meatballs



材料 :
300克肉碎
3棵香茅 (剪半〕
适量萝卜碎
1节莲藕碎
适量面包糠

腌味料 :
1粒鸡蛋 (打散〕
1汤匙薯粉
少许胡椒粉
1茶匙鸡精粉
少许糖
2茶匙麻油

做法 :
1。把肉碎放入大碗,加入全部腌味料一起搅拌均匀。
2。放入冰箱腌1小时。
3。再加入萝卜碎和莲藕碎搅拌,分成6粒大小一样的肉丸。
4。把肉丸沾上蛋液再沾面包糠,用香茅把肉丸串上。
5。烧热油,让肉丸炸至金黄色或熟透。

弃旧迎新 My New Oven



这是我第一个烤箱, Sharp E018. 
六年前,它加入我的好帮手行列。
今年,我把它转送给我阿姨,
因为,我有了它!



我的新烤箱, Faber 40L.
买这款烤箱是因为朋友介绍,
我又有些 cash voucher,
再加上我的旧烤箱实在太小了,
居然连一个戚风蛋糕模型都放不进,
所以连大男人也批准了。

它的第一个制作品,
就是我的 Biscouti.

还蛮不错,够大,
不需要烘太多次,也不需要翻方向。
因为旧烤箱的热能不均匀,
需要一直把烤物翻方向。

等着吧,我将要试做戚风蛋糕。。。

椰丝年糕 Steamed Nian Gao with Dessicated Coconut



材料 :
1粒  中型年糕 (蒸软〕
半粒 椰丝
少许 盐

做法 :
1。以小火蒸椰丝5分钟, 再撒上少许盐,搅匀。
2。用小刀把年糕切成小块,再沾上椰丝。


番薯发糕 Sweet Potato Fatt Gou



Ingredients A :
1 tbsp Dry Yeast
1 tsp   Sugar
2 tbsp Flour
60ml   Warm Water

Ingredients B :
200g   Mashed Sweet Potato
200ml Coconut Milk
300g   Flour (sifted)
120g   Sugar
2 tsp   Double Action Baking Powder
1        Egg

Method :
1. Mix ingredients A and set aside for 30 min.
2. Add ingredients B and mix well. Set aside for another 30 min.
3. Pour the batter into small cups and steam over high heat for 20 min.


Note : Make 20 pcs fatt gou.

意式脆饼 Biscotti



Ingredients :
3       Egg Whites
100g Castor Sugar
120g Plain Flour
120g Whole Unblanched Almond

Method :
1. Whisk egg whites until light and fluffy.
2. Add in sugar and whisk until stiff.
3. Fold in flour and almonds lightly.
4. Line a 8" x 4" loaf tin with baking paper and pour in the mixture.
5. Bake in a preheated oven at 180  ̊C for 30 min.
6. Remove and leave to cool.
7. Cover the loaf and chill in the fridge for a day.
8. Cut the loaf into thin slices.
8. Arrange them onto a lined baking tray and bake at 130  ̊C for 40 min or till crsip and dry.
9. Leave to cool and store.
