蜂蜜芝士烧烤蛋糕 Honey Cheese Baked Cake


份量 :9" 圆模一个

材料(A) :
57g 玉米油
22g 蛋白
30g 全蛋
10g 蜂蜜

50g 低筋面粉
10g 玉米粉
1/2tsp 发粉

70g 蛋黄

材料 (B):
170g 蛋白
60g 幼糖
少许 海盐

淋面 :
25g 牛油
12g 玉米油
40g 车打芝士片
35g 动物性鲜奶油


做法 :
1。将所有粉类过筛,混合备用。
2。将油,蛋白,全蛋和蜂蜜拌匀,加入粉类,轻轻的拌匀后,再拌入蛋黄。
3。将蛋白打至起泡,分 2 次加入幼糖和海盐,拌打至湿性发泡(蛋白可以勾起一个坚挺的小弯钩)。
4。将蛋白糊分 3 次加入蛋黄糊里,并以切拌方式轻轻地拌匀。
5。将蛋糕糊直接倒入模子里,放入预热烤箱,以上火170°C 烤 15 分钟后,转上下火 190°C 烤 25分钟,或至熟,取出。
6。倒扣待凉,即倒扣收入冰箱冷冻隔夜。
7。第二天,将淋面材料煮溶。
8。取出蛋糕,脱模,立即淋上芝士酱。
9。放入预热烤箱,以上火 230°C 烤 8 分钟,即可。

Makes 9" round cake

Ingredients (A) :

57g Corn Oil
22g Egg Whites 
30g Whole Egg
10g Honey

50g Cake Flour
10g Corn Flour 
1/2 tsp Baking Powder

70g Egg Yolk

Ingredients (B) :
170g Egg Whites 
60g Castor Sugar 
Pinch of salt

Toppings :
25g Butter
12g Corn Oil 
40g Cheddar Cheese Slices
35g Dairy Whipping Cream 

Method :
1. Sieve all type of flour, mix well and set aside. 
2. Mix oil, egg whites, whole egg and honey in a mixing bowl. Fold in flour gently and add in the egg yolk. Mix well and set aside.  
3. Beat egg whites, sugar and salt till soft peak formed. 
4. Fold egg whites into egg yolk batter gently in 3 batches. 
5. Pour the well mixed batter into cake mold and bake in a preheated oven at 170°C for 15min using only upper heat. Continue bake for another 25min at 190°C using both upper and bottom heat. 
6. Overturn the cake with its mold till cooled and freeze overnight. 
7. Cook the toppings until all ingredients melted on the following day. 
8. Unmold the cake and pour over the toppings.
9. Bake in a preheated oven at 230°C for 8 min with only upper heat.
