日式乳酪蛋糕 Japanese Cheese Cake


Ingredients :
80g cream cheese
60ml milk
2 egg yolks
2 egg whites
90g sugar
3tbsp flour (sifted)
11/2tbsp corn flour (sifted)
1/3tsp cream of tartar (sifted)

Method :
1. Cook cheese and milk over low heat until cheese melt. Set aside.
2. Beat egg whites until stiff. Stir in cream of tartar and half portion of sugar at a time and beat until stiff peaks  form. Set aside.
2. Beat egg yolks and remaining half portion of sugar until light and fluffy.
3. Fold in cheese mixture.
4. Fold in flour and corn flour.
5. Spoon egg whites into batter and mix well.
6. Pour batter into baking tin. Bake with marie baine style at 180  ̊C for 20 min and reduce to 150  ̊C for another 15 min. Stand 10 min before taking out from the oven.
